Chocolate Mint Brownies

   Here is a fun treat for St.Patrick's Day ,or for any time of year!
Ingredients:
1/2 c. butter
2 oz. unsweetened chocolate,chopped
1 c. sugar
1/2 c. flour
2 eggs
Melt the butter and chocolate together in a double boiler.In the bowl of your mixer,mix together the sugar,flour and eggs.Slowly add the chocolate mixture to the flour mixture.Spread into a greased 9 inch square baking pan.Bake at 350 degrees for  20 minutes.

Filling:
1-1/2 c. confectioners sugar
3 tbsp. unsalted butter,softened
2 tbsp. milk
1/2 tsp. peppermint extract
2-3 drops of green food coloring(optional)
In a small mixing bowl,blend the ingredients together until creamy.Spread over the cooled brownies.Refrigerate for 30 minutes,then top with glaze.

Chocolate Glaze:
1/2 c. chocolate chips
2 tbsp. unsalted butter
Melt the chips and butter together in a double boiler.Carefully spread over the filling.Refrigerate until the glaze and filling are set.

***The chocolate may also be melted in a microwave,just be very careful not to burn it!I prefer a double boiler.
***Be careful with the peppermint extract..it is very strong.
